Ecological and Food Systems Interactions in Costa Rica

Course Description: This course will help students understand the critical interrelationship between the growth and processing of human food and the natural systems upon which food production depends. Our goal is to have students integrate ecological and agricultural perspectives and view the world in a more holistic fashion. The course also includes an introduction to the culture, history, economy, and government of Costa Rica. Class time to be arranged. 3 credits.

Students who are juniors and seniors in food science, nutrition, dietetics, animal ecology, and related fields are encouraged to participate. Approximate cost of travel is $1770 including airfare.
