Sweet Potatoes with Honey-Mustard Pork

1-lb. sweet potatoes, peeled and cut into bite-size cubes
3 cloves garlic
¼ tsp. salt
¼ tsp. black pepper
2/3 c. chicken broth
2 T. honey
1 T. mustard
2 tsp. lemon juice
1-lb. pork loin, cut into cubes

Preheat oven to 425°F. In large bowl, combine sweet potatoes, garlic, salt, and black pepper. Toss until well combined. Spoon sweet potatoes into a 7x11 - inch baking dish and add 1/3 cup of the chicken broth. Cover with foil and bake for 15 minutes. Stir together with honey, mustard, and lemon juice in bowl. Add pork and stir to coat. Place pork on top of sweet potato mixture in the baking dish, add remaining 1/3 cup of chicken broth, and roast uncovered for 30 minutes (or until the pork is cooked).
Makes 4 servings.
